Good beef starts long before the processor. It starts with the bull and the cow.
That’s why we started a registered Angus herd here in Sylvester. Every animal on this page is registered with the American Angus Association. We pick them for what makes a good mama cow and a good steak: calving ease, marbling, ribeye, and cattle that hold up in South Georgia heat.
We’re just getting started. As we add bulls and cows, and as our own registered calves come along, you’ll find them here.
What do these numbers mean?
Registered Angus cattle carry EPDs, short for Expected Progeny Differences. They’re the American Angus Association’s estimate of how an animal’s calves will perform compared with the rest of the breed. When we say “top 5%,” that animal ranks ahead of 95 out of 100 Angus for that trait.
- Calving ease (CED)
- How easily its calves are born.
- Marbling
- The white flecks of fat inside the meat. That’s where flavor and tenderness come from.
- Ribeye
- The size of the ribeye. More muscle, more steak.
- Hair shed
- How early cattle slick off in the spring. It matters in our heat.
- $M and $C
- The Association’s dollar indexes. $M measures mama-cow value. $C rolls the mama-cow traits and the carcass traits into one overall number.
